Preheat oven to 400 degrees F and spray baking sheet with nonstick cooking spray
If you aren't using already thin sliced chicken, slice your chicken horizontally into 4 cutlets. Season with salt and pepper.
In shallow bowl, combine pecans, breadcrumbs and seasonings (salt, pepper, all purpose, parmesan or whatever you wish!)
In a separate shallow bowl, beat eggs.
Dip chicken in eggs, then in the pecan/breadcrumb mixture, coating both sides. Place on the sheet pan.
(If you are adding potatoes and/or veggies, toss in some oil, salt and pepper and place on the pan.)
Bake for 10 minutes, flip the chicken over and cook for an additional 10 minutes, until golden brown.
