Servings: 4 people
Ingredients
  • 1 tbsp Olive Oil
  • 1 lb Spicy Italian Sausage (cut into 1/2-1" slices) (We like Johnsonville Brand)
  • 1 large Onion, diced
  • 2 tsp Minced Garlic
  • 2 cups Chicken Broth
  • 1 can Petite Diced Tomatoes (10 oz can), drained
  • 1 box Pasta of your choice (we use penne)
  • 1/2 cup Milk or Cream
  • 1/2 cup Monterey Jack cheese, shredded
  • Salt and Pepper, to taste
Instructions
  1. Add olive oil to a large pan over medium high heat.

  2. Add onions and sausage and cook until lightly browned. Add garlic and cook for about 30 seconds.

  3. Slowly pour in chicken broth, tomatoes, milk, pasta, and salt + pepper. Bring the mixture to a boil, cover, and reduce heat to low. Simmer for about 15 minutes, or until pasta is tender and most of the liquid is absorbed.

  4. Remove pan from heat and add cheese.

  5. Combine and enjoy!

Recipe Notes

*You can use sweet or mild sausage if you do not want spicy
*Quick hack to make slicing sausages easier - put them in the freezer for a few minutes first. This will also help the sausage retain moisture while cooking. Preparing uncooked sausage slices will give an added bonus of having a mouthwatering, caramelized texture on each side of the sausage. (Hack from Johnsonville website)
