Ingredients
  • 2 Sweet Potatoes
  • 1 medium Onion
  • 1/2 Avocado
  • 2 Tablespoon Olive Oil
  • Salt & Pepper
  • 1 Teaspoon Garlic Powder
  • 1 Tablespoon Sugar
  • 3 oz. Sausage (I use Jimmy Dean’s)
  • 4 Eggs
  • Shredded Cheddar Cheese
  • Hot Sauce (Optional)

Instructions
  1. Peel Sweet Potatoes and dice into 1/2 inch cubes. Dice Onion. Slice Avocado.

  2. Drizzle Olive Oil into large skillet and turn to medium heat. Add Sweet Potatoes, Onions, Salt, Pepper, Garlic Powder & Sugar into pan and give it a nice toss, coating the veggies with oil and seasoning. Saute for 10-15 minutes, mixing occasionally. (Move onto Step 3 while you wait)

  3. In small pan, brown the sausage (… or Bacon, whatever makes you happy), crumble as you go. Once nice and toasty brown, throw into Sweet Potato pan- fat and all! DO NOT remove excess fat/oil from the sausage… You’re cooking the eggs in that pan, next!

  4. We typically scramble our eggs for this dish, but over easy/medium is great too! So, scramble eggs. Easy! Sprinkle in Cheddar Cheese and add Salt & Pepper to taste.

  5. Place Sweet Potato, Onion, Sausage mixture on the plate, Eggs come next and top with the sliced Avocado. (Want some heat? Toss on some hot sauce!)
